peach heaven

Cali and I bought a couple of boxes of peaches on Moday. I love peaches. Here is my favorite peach recipe. I can barely live without this and I think about it all year long until peach season rolls around.

Cortney always whips up the crepes...because I don't have the patience for making them thin and pretty. Once when Carolina was blessed Cali and him cooked up over 200 of these little babies, for the luncheon afterwards. So he has a real crepe talent.

I just use a basic recipe from allrecipes.com

Basic Crepe
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted
DIRECTIONS
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
  • I add a couple tablespoons of sugar to this and this time a little almond extract. This recipe is fail proof. It always turns out and it is really yummy.

    Then for the filling:

    I melt 1/4 cup butter with 1/4 c brown sugar in a sautee pan. As soon as the butter is melted I add sliced peaches. (I used 5 last night but you could probably add up to 8). Once you add the peaches the butter and brown sugar combine together to make the most delicious caramel butter sauce. You only cook the peaches like a minute. You don't want them cooked but just get warmed. You still want them to taste like fresh peaches. This is so easy and is a favorite of any one that has it.

    You have to serve with whipped cream (the real stuff people)...and I always top it with tons of powdered sugar. My kids loved this.

    Now go out and get some peaches...I think we have a couple of weeks of good peaches still here in Utah so, seriously get your hands on some and make this.
